Peanut Butter Energy Bites-Round One!
Well, I’m still in search of great lunch snacks…so far, its been veggies and dip (stand by for the White Bean Hummus Dip), trail mix, fruits (mainly cherries/berries), pretzels and PB, cheese and crackers and now, PB Energy Bites! Yum.
A few weeks ago, I discovered “Superfood Balls” from a local store called Bamboo. They make a lot of tasty treats in house and these grab n’ go superfood balls are excellent. A great blend of everything you’d need in a protein packed snack. I checked out their ingredient list and its basically, PB, puffed rice, tahini, brown rice syrup, pumpkin and sunflower seeds, raisins, spirulina, flax and oats. I also spoke to a friend of mine who makes her own. She adds chocolate chips to hers, which sounds excellent. She gave me the link and I think I will try those next.
My first attempt turned out pretty good. I definitely want to continue to improve on them. I think maybe less PB and more of other things…as the PB is a bit overbearing. And while I can definitely eat spoonfuls of PB, I want to try to get a little closer to the lighter taste of the superfood bites I tried.
Here they are!
1/2 cup PB
1/4 cup flax meal
1/4 cup coconut
1/4 cup raisins
1/4 cup sunflower seeds
1/2 cup oats
1/4 cup honey
Directions: Mix all ingredients together and shape into balls. (I made 20 small ones) Store in fridge.
Yum! But like I said, maybe too peanutbutter-y? I think I’ll go on a little mission to figure out the recipe they use at Bamboo…I think they may be onto something with the puffed rice..
